Mona, these were just simply poached; you ain't seen eggs bennie yet, girl! I've two favourites... California bennies, with thanks to my chef-ly cousin Chris; Newport Blues eggs bennie, with thanks to Syd's old sous chef, Jonathan.

There's nothing like a perfectly poached egg - all runny sitting on top of one's favorite bread product. My personal favorite is challah, but English muffins do nicely.
